Description

An adaptation of the traditional Hawaiian dish shoyu (soy sauce) chicken. Sweet, slightly salty, and succulent.

Ingredients

  • ¾ cups Low Sodium Soy Sauce
  • ½ cups Vinegar (apple Cider Vinegar Works Well)
  • ¼ cups Pineapple Juice
  • ¾ cups Brown Sugar, Packed
  • 1 teaspoon Ground Ginger
  • 2 cloves Garlic, Finely Chopped
  • 1-½ cup Water
  • 1 pound Boneless Skinless Chicken Breasts OR 8-12 Bone-in Chicken Thighs
  • 1 cup Crimini Mushrooms, Very Thinly Sliced

Preparation

In a Dutch oven over low heat, add soy sauce, vinegar, pineapple juice, brown sugar and ginger. Stir to combine and heat just long enough for the sugar to dissolve. Add chopped garlic, water, and chicken. Turn chicken to coat.

Bring to a boil and skim off and discard any foam that rises to the top. Reduce heat to low and simmer with the lid closed for 45 minutes to an hour.

At this point, stir or flip chicken pieces so that the opposite side is immersed in the sauce. Add mushrooms, stir, and cover. Cook an additional 45 minutes to an hour or until the chicken is easily shredded with two forks.

Shred chicken and stir. If using chicken thighs, remove the chicken to a plate, shred, discard bones, and return the meat to the sauce.

Serve over steamed or brown rice and enjoy!

Note: this recipe may be easily doubled using double the chicken and the same amount of sauce, and works just as well in the slow cooker. For a crock pot or slow cooker, add all ingredients at once and cook on low heat for 6 hours or until chicken is tender and easily shredded.

Super easy and YUMMY! I threw everything into the crockpot (didn’t even bother thawing the chicken breasts), let it go overnight and in the morning we were all set for an amazing meal at lunchtime. I served it over brown rice and it was a hit with everyone!

This was “Okay.” I made it in my crockpot – would reduce soy sauce amount next time as I only had regular not reduced sodium. At 5 hours in crockpot, I poured off most liquid and reduced it on stove in a saucepan, shredded chicken and added a can of pineapple chunks (minus liquid) – once liquid reduced I added a little corn starch mixed with water to thicken further. Added a bit to the crockpot – but saved balance for individuals to add to their meals. In final half hour, I sliced up a yellow pepper into thin strips and added it to the crockpot. Served over rice. (Added a side of Hawaiian Coleslaw – found recipe online) and enjoyed dinner.

Quick & simple in the slow cooker. I was worried my husband (a picky eater) wouldn’t like the sweet flavors on the chicken but all sauce ingredients mingled well together & nothing was too overpowering. Delicious! Thank you!

Was loved by kids and adults alike! I didn’t have low sodium soy sauce, so I used regular. My hubby thought it was a bit too salty so I will be sure to follow instructions next time! Thanks for sharing!

Very juicy and flavorful. More time consuming than I thought, but makes the chicken really tasty. I think addition of pineapple pieces is a great idea!
