A surprisingly easy recipe that produces a restaurant quality presentation. Chicken breasts are stuffed with ham, cheese, and salsa, and dipped in breadcrumbs.
Mix breadcrumbs, chili powder, paprika, garlic powder, and Cajun seasoning in a bowl. In another bowl, place melted margarine.
Place 1 slice of ham and 1 slice of cheese on each chicken breast. Fold in half and secure with a toothpick. Dip each chicken breast into the margarine and then the breadcrumb mixture, coating well. Spoon salsa on outer edges of chicken breast.
Melt a few tablespoons of margarine and olive oil over medium high heat in a large pan. Cook each chicken breast for 5 – 6 minutes per side, flipping several times. Add more margarine and olive oil as needed. Cook until chicken is no longer pink and juices run clear.
