Description

This is a nice change up from ground beef and is just as flavorful and easy to prepare.

Ingredients

  • FOR THE FILLING:
  • 2 Tablespoons Canola Oil (for Frying Ground Turkey)
  • 16 ounces, weight Ground Turkey
  • 1-¼ teaspoon Chili Powder
  • 1-¼ teaspoon Onion Salt
  • ½ teaspoons Ground Cumin
  • ½ teaspoons Black Pepper
  • 1 cup Diced Bell Pepper (stem Removed And Seeded)
  • 1 cup Diced Onion
  • 1 can (15-ounce) Can Diced Tomatoes
  • 1 cup Low Sodium Vegetable Stock
  • FOR THE TACO ASSEMBLY:
  • 8 whole 6" Flour Tortillas (warmed)
  • 2 cups Shredded Cheddar Cheese

Preparation

In a large skillet (10″) or frying pan add canola oil and ground turkey and heat on medium low heat. Break up turkey meat with a wooden spoon as it cooks. Once it starts to brown add seasonings (chili powder through black pepper) and stir mixture together. Add diced bell pepper and diced onion and stir well. Add diced tomatoes and vegetable stock, turn heat to medium. Put the lid on and cook turkey taco mixture for 18-22 minutes, stirring a few times during cooking time.

Warm the tortillas in the microwave just a few seconds each (15-20 seconds) and place on a clean work surface. Spoon a generous amount of turkey taco mixture in the middle of tortilla, add desired amount of shredded cheese, fold taco together and place on a serving platter. Repeat with the remaining tortillas and mixture.

Serve on individual plates and enjoy this delicious turkey taco!
