Description

This is a wonderful dish that has all the right components: a little crunch, a little sweet, a little spicy! All of my favorites and really easy to do. A great meal for any occasion and affordable, too!

Ingredients

  • FOR THE CHICKEN AND MARINADE:
  • ¼ cups Soy Sauce
  • ⅓ cups Brown Sugar
  • 2 Tablespoons Freshly Squeezed Lime Juice
  • 2 cloves Garlic, Minced
  • 1 teaspoon Grated Fresh Ginger
  • ¾ teaspoons Red Pepper Flakes
  • 2 Tablespoons Water
  • 1 pound Skinless, Boneless Chicken Breast

  • FOR THE COCONUT RICE:
  • 1 cup Coconut Milk
  • 1-½ cup Water
  • 1 teaspoon Salt
  • 1 Tablespoon Sugar
  • 1 cup Jasmine White Rice
  • _____
  • FOR THE PEANUT SAUCE:
  • ¼ cups Creamy Peanut Butter
  • 2 Tablespoons Water
  • 4 Tablespoons Sugar
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Rice Wine Vinegar
  • 1 teaspoon Lime Juice
  • _____
  • FOR GARNISHING:
  • 3 Tablespoons Chopped Cilantro
  • 3 Tablespoons Chopped Cashews Or Peanuts

Preparation

Combine all of the chicken marinade ingredients and place in a shallow glass dish. Place chicken in the marinade and toss to coat. Allow the chicken to marinate for 30 minutes in the refrigerator or up to 2 hours. In a grill pan over medium heat, grill the chicken 6–8 minutes per side.

For the coconut rice, in a saucepan, combine the coconut milk, water, salt, and sugar. Bring to a boil. Add the rice, stir well, and reduce the heat to medium-low. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20 to 24 minutes. Remove from the heat and let sit without stirring for 10 minutes. Fluff with a fork.

For the peanut sauce, combine all the ingredients in a small saucepan and cook over medium heat until the mixture is bubbly. Cover the pan and remove from the heat.

To finish the dish, place some coconut rice on a plate. Top with grilled chicken and drizzle with peanut sauce. Garnish with chopped cilantro and chopped nuts. Enjoy!

Amazing! I have been making for awhile and it’s my kids favorite dish. I usually skip the marinade as I am usually short on time. The peanut sauce is so flavorful we don’t even miss it. Try it!

This meal was delicious! Each part was wonderful individually, and when combined, it was awesome. I have made several versions of peanut sauce but this was by far the best.

I made this for dinner last night and it was excellent! I loved all the flavors and the peanut sauce was so good…I could put that on cardboard and it would be delicious. Served it with a side of sauteed snow peas. Yum!

This was phenomenal. I had to let the chicken marinade overnight and was afraid it might be a little tough the next day but instead it was extra flavorful. Everything was easy to make and the flavors were like a party in my mouth. The peanut sauce was out of this world. Thank you for sharing this recipe.
