Description

Sometimes you just need to change things up a bit.

Ingredients

  • 1 pound Flank Steak
  • 3 Tablespoons Worcestershire Sauce
  • 1 whole Lime
  • 2 cloves Garlic, Smashed
  • 1 whole Large White Onion
  • 2 whole Large Red Bell Peppers
  • 2 Tablespoons Cooking Oil
  • 6 whole Flour Tortillas
  • 2 cups Grated Monterey Jack Cheese

Preparation

Cut flank steak into strips 1/4-inch wide and 3 inches long.

Mix Worcestershire sauce, lime and garlic. Marinate the steak for 30 minutes.

While steak is marinating, cut onion and bell pepper into 1/4-inch wide strips. Heat oil in a nonstick skillet over medium heat and cook until they begin to sweat. Remove the peppers and onions with a slotted spoon to a paper plate to drain.

Remove the steak from the marinade and brown in same skillet until done about 3-4 minutes depending on how you like your steak cooked. Remove the cooked steak and set aside.

Spray your grill pan with cooking spray or spray the same non-stick skillet. Take one tortilla and put a small amount of grated cheese, meat, onion and bell pepper, then some more cheese on half the tortilla. Fold the tortilla in half (this is the trick to keep them together, plus now you will only eat 4 pieces) and repeat the process with remaining tortillas.

Place 2 of the tortillas in grill pan or skillet and cook until cheese melts and you see those lovely grill marks. Flip and cook on other side same amount of time.

Slice each tortilla with a pizza cutter into 4 pieces and serve with your favorite dipping sides!
