A fresh and spicy main course that can be pulled together in under 15 minutes!
Heat a grill pan over medium-high heat and spray with a little olive oil. Season the shrimp skewers with a little salt and pepper, to taste. Grill the shrimp in two batches, cooking for about 1-2 minutes per side. Don’t overcook the shrimp! Take the shrimp off the pan and set aside.
Combine the sauce ingredients in a mini food processor and blend until everything is finely chopped.
Top the skewers with sauce and enjoy!
