Pork marinated in teriyaki/ginger sauce and grilled on wooden skewers—great appetizer or main course!
Trim off any visible fat from the pork, then cut into 1/2-inch strips (4 strips per chop).
Mince the garlic, and mix with soy sauce, teriyaki sauce, sugar, lemon juice, olive oil, and ginger in a medium bowl. Add the pork to the bowl, and toss to coat well. Marinate in the refrigerator for at least 1 hour.
To cook: Preheat a grill over medium-high heat and grease with more olive oil. Soak wooden skewers for a good 10 minutes in water, to prevent burning. Thread the meat onto skewers (2 per stick), and when grill is hot, cook for 2-3 minutes on each side, until cooked through and no pink remains.
