Description

Simple to make a perfect for busy weeknights, this Grilled Garlic Herb Pork Bowl is sure to be a favorite all year long!

Ingredients

  • 1 whole (about 27 Oz. Size) Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Minced Garlic
  • 1 pound Fresh Baby Spinach Leaves
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 4 cups Cooked White Rice, To Serve
  • Lemon Wedges For Topping, If Desired

Preparation

Heat a charcoal or gas grill to about 375ºF to 400ºF.

Place porkt onto grill and grill for 30–40 minutes per pound, turning occasionally, until meat reaches an internal temperature of 145ºF.

Once pork is done, remove from grill and let rest 5–10 minutes. Cut into thin slices.

While pork is cooking, prepare spinach. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add spinach, salt and pepper. Toss and sauté for about 3–4 minutes, or just until it begins to wilt. Remove from heat.

To assemble bowls, fill each bowl with white rice, and then top with sautéed spinach and 3 slices of pork.
Garnish with a lemon wedge, if desired. Enjoy!
