A yummy Italian-style grilled cheese, made outside on the grill!
Preheat your grill to medium low. While the grill is preheating, spread 1 tablespoon of basil pesto on 1 side of each piece of flatbread.
When grill is ready, lay a sheet of tinfoil over the hot coals. Place 1 piece of flatbread, pesto side up, on the tinfoil. Layer on the thinly sliced mozzarella, then the tomatoes. Sprinkle with oregano. Place the second piece of flatbread, pesto side down, on top of the mozzarella and tomatoes.
Close the lid and grill approximately 2-3 minutes. Flip and grill 2-3 on second side, with the lid closed.
