An excellent blend of sweet fruit and salty bacon.
Cook the bacon in a skillet over medium heat until crispy. When done, put the bacon on a paper towel to drain the grease.
Mash the banana in a bowl and set aside.
Butter one side of each slice of the bread really well. Turn the bread over so the buttered side is facing down. Spread the mashed banana onto the unbuttered side of one of the pieces of bread. Top with bacon. Cap it with the second slice of bread, buttered side up.
Heat a pan over medium heat and drop the sandwich onto it. Grill both sides of the sandwich until each side is nice and golden brown. If you have a panini maker, all the better. Flip so the sandwich is grilled on both sides. Enjoy.
