A simple, delicious and healthy Greek recipe straight from the heart.
Preheat oven to 400°F.
In a medium-sized bowl, combine feta, tomatoes, olives, onion and parsley. Pour Greek salad dressing over salsa, toss gently. Cover with plastic wrap and chill in refrigerator until ready to use.
Sprinkle both sides of chicken breasts with Greek seasoning, black pepper, and a pinch of kosher salt and pan fry 2-3 minutes on both sides.
Line a baking sheet with foil, spray with cooking spray and place chicken breasts in a single layer. Bake for 20-30 minutes or until juices run clear.
When chicken is completely baked, plate each chicken breast and spoon Greek salsa over each piece.
