Description

Fluffy gnocchi potato pillows swimming with chicken and sauce – how can you lose?

Ingredients

  • 3 Tablespoons Olive Oil, Divided
  • 2 whole Boneless, Skinless Chicken Breasts
  • Salt And Pepper, to taste
  • 10 ounces, weight Package Of Prepared Gnocchi
  • 4 Tablespoons Butter
  • 5 cloves Garlic, Minced
  • ½ cups White Wine
  • ½ cups Parmesan Cheese
  • 5 leaves Basil, Sliced Thinly

Preparation

Heat a medium pan with 2 tablespoons of olive oil to sautee chicken breasts. Season chicken with salt and pepper and place in pan. When cooked through, remove from pan and chop into bite size pieces. Set aside.

Boil water, and prepare gnocchi according to package directions. (I use the pre-packaged ones especially when in a rush). Add to water the remaining 1 Tablespoon of oil.

In medium pan, add butter and garlic and saute. Once the garlic is softened, add white wine and simmer. Add chopped chicken back to the pan and let heat up with sauce.

Take drained gnocchi and toss into the chicken mixture as well.

When simmering again, turn off heat and add in parmesan cheese. Mix together and spoon four servings into shallow soup or salad bowls.

Layer basil leaves on top of one another, roll up and slice thinly. Garnish dishes with sliced basil – and serve!

I have some gnocchi that I bought at world market and I haven’t found a recipe that I’ve wanted to use it with until I found yours! Can’t wait to try it! :)

Easy to make and tastes great! Not to mention I have been in search of a recipe for that sauce; so simple but oh so good!

This is incredibly delicious! I also let the chicken brown a bit, then cooked the sauce in the same pan.

This was boyfriend is allergic to shellfish so he can’t eat my favorite shrimp scampi, so this was a yummy compromise. Thanks!
