The other gnocchi, made with semolina, butter, cheese. It’s so easy and typically Italian!
1. Bring the milk, salt, pepper and butter to a boil in a large sauce pan, then add the semolina and stir vigorously for 5 minutes, lowering the heat if necessary, until smooth and thickened. Remove from heat, add the egg and 1/2 cup Parmesan, stir vigorously until combined.
2. Spread the mixture on a flat baking sheet covered with foil, into a 1/2-inch thick rectangle. Let cool completely for 1 hour.
3. Preheat oven to 375°F. Cut dough into circles or squares, and place into baking dish slightly on top of each other in a row. Sprinkle with remaining 1/2 cup Parmesan, then grated Swiss cheese, then bake for 20 minutes, before serving warm, with a salad.
