Great meal for hot summer nights when you don’t want to heat up the kitchen!
Mix the noodles according to the package, but set the timer for 2 minutes less than what it calls for.
While the noodles are cooking in the microwave, take 2-3 handfuls of frozen shrimp (I buy the kind with the tails already off) and thaw in a bowl of cold water.
When the microwave goes off, do not remove the noodles from the microwave. Drain the shrimp and add to the noodles and stir, close the microwave and continue cooking for the remaining 2 minutes.
Let shrimp and noodles sit for a few minutes before removing from the microwave.
When I take them out I sprinkle with a little garlic salt and serve.
*NOTE: you can try this with other noodles as well. I also like to use Rice-A-Roni’s Angel Hair pasta.

You can also try adding grilled chicken (we buy the bags of Tyson grilled chicken strips) and throw that in instead of the shrimp for another variation!
