Simple, flavorful grilled chicken breasts with the tang of lime.
Place chicken breasts in a large plastic storage bag. Combine marinade ingredients (lime juice, crushed garlic cloves, salt, and black pepper) and pour over chicken. Seal bag and marinate in refrigerator for several hours to overnight.
Before grilling, combine all corn relish ingredients (corn kernels, chopped jalapeno, diced red bell pepper, cilantro, lime juice, and a sprinkle of salt) in a medium bowl.
Set grill to medium heat and cook chicken breasts about 4 to 6 minutes per side or until internal temperature reaches 170 degrees F. Remove from grill and serve.
For serving, spoon corn relish over each piece of chicken and serve with Bush’s Black Bean Fiesta Grillin’ Beans on the side.

We enjoyed this simple recipe. I did not have a lime, just lime juice, and I did not have fresh garlic cloves on hand. I’m sure this will taste even better the next time that I use this recipe, when I do have fresh ingredients! What I wanted to share is that I used the leftover chicken the next day to make chicken salad. I’ll post the recipe!

But I’m wondering, what are the marinade ingredients, is it the garlic, salt, & pepper?
