A perfect way to use all those seasonal tomatoes that you have on hand. The recipe is easy and allows for adjustments for personal tastes. A family favorite!
Blanch and peel tomatoes. Chop finely or process in a food processor to 1/4-inch pieces. Chop onion, garlic, basil and parsley in the food processor or by hand. Add to tomatoes, including the juice. Squeeze lemons; add lemon juice, olive oil, salt and pepper.
Proportions of all ingredients can be adjusted to taste. Serve at room tempature or cold over hot pasta. Garnish with cheese.
