Description

This is the fourth recipe from my Grandma Evie’s recipe box that I have attempted to make. Although I cannot recall her making this dish for me, once I tasted it I was brought back to her kitchen. Enjoy a casserole fit for a cold MN day!

Ingredients

  • 1 cup Celery, Chopped
  • 1 whole Onion, Chopped
  • 1-½ pound Hamburger
  • 1 can (10.75 Oz. Size) Cream Of Mushroom Soup
  • 1 can (10.75 Oz. Size) Chicken Rice Soup
  • 2 cans Water (Use The Soup Can To Measure)
  • 2 Tablespoons Soy Sauce
  • ½ cups Rice, Uncooked
  • 2 cups Chow Mein Noodles

Preparation

Preheat the oven to 350ºF. Chop the celery and the onion. Add to hamburger and brown all together.

In a mixing bowl, mix together the mushroom soup, chicken rice soup, water, soy sauce, and rice. When hamburger is browned and the onion and celery are translucent, add all to the mixture in the bowl. Mix well. Pour into a greased casserole pan.

Bake uncovered for 1 hour. Take casserole out of oven and sprinkle the chow mein noodles over the top. Place casserole back in the oven for 15 more minutes. Remove from oven and let stand for 10 minutes before serving.

I’m new to the site, and this is the first recipe I tried. It was delicious, and as the submitter said, great for cold weather. The best part was that I got two loads of laundry done and cleaned the bathroom while it was cooking. Always a plus!
