Description

You can make this easy shrimp fried rice in just 20 minutes (how-to video in related blog post). It’s healthy, delish and perfect for meal planning.

Ingredients

  • 2 Tablespoons Vegetable Or Olive Oil, Divided
  • 1 pound Shrimps (peeled And Deveined)
  • 1 pinch Sea Salt And Pepper
  • 2 cloves Garlic, Grated
  • 1 piece (1-inch Size) Fresh Ginger, Grated
  • 1 teaspoon Chili Flakes, Or To Taste
  • 1  Large Carrot, Peeled And Finely Chopped
  • 1-½ cup Snap Peas, Cut In Half
  • 1  Red Bell Pepper, chopped
  • 5 ounces, weight Shimeji Mushrooms
  • 2 cups Basmati Brown Rice, Cooked
  • 2 Tablespoons Soy Sauce Or Coconut Aminos
  • 2 Tablespoons Sliced Green Onions
  • 1 Tablespoon Sesame Seeds

Preparation

Heat 1 tablespoon oil in a large skillet over medium heat. Add shrimp, sea salt and pepper, garlic, ginger, chili and stir-fry for 2–3 minutes, or until shrimp turn pink. Set aside.

In the same heated skillet, add remaining oil. Add carrots, snap peas, bell peppers and mushrooms. Sauté for 3–4 minutes, stirring constantly.

Stir in rice and soy sauce and cook for an additional 2–3 minutes. Return shrimp to the pan, and garnish with green onions and sesame seeds.

For meal planning, divide the shrimp fried rice between glass containers with fitted lids and refrigerate for up to 3 days. Serve warm or cold.
