Description

I have tried a couple different variations of this recipe. I know it’s supposed to be very simple, but somehow I could never get it right. Then I found a great recipe online. I switched it up a little and found what my family and I love exactly. It’s super easy. Make it for many, make it to eat off of for a few days or make it for comfort food!!

Ingredients

  • 6 whole Potatoes
  • 1 whole White Onion
  • 1 pound Ground Beef
  • 2 Tablespoons Milk (or More If Desired)
  • 2 Tablespoons Sour Cream (or More If Needed)
  • 1 can (14 Oz. Size) Cut Green Beans
  • 2 cups Grated Cheddar Cheese

Preparation

Start by peeling and chopping your potatoes. Boil them in water until they are fork tender.

While the potatoes are cooking, finely chop the onion. Brown the onion and ground beef together in a hot skillet. When the beef is fully cooked, drain the fat and set aside.

When the potatoes are tender, drain the water and add your milk and sour cream. Mash the potatoes, adding more sour cream or milk to get your desired texture.

In a large baking dish, line the bottom of the dish with green beans. Next add the beef/onion mixture on top of the green beans. Then top the beef mixture with a layer of mashed potatoes. Repeat this process as many times as you would like. When finished with these layers, sprinkle the grated cheese on top.

Bake at 350 degrees (F) for 20 minutes.

This recipe can be switched up any way you would like. For example, my mother-in-law does not use onions, but instead, sprinkles garlic powder throughout the casserole. Also, some people prefer peas or corn rather than green beans. Experiment and see what suits your taste buds!!

We loved this recipe!  I lightened it considerably by using ground turkey, light sour cream, and skim milk.  I also seasoned the meat with a clove of fresh, chopped garlic and season salt (no onion).  I used about 1/2 a stick of butter when whipping the potatoes with a mixer and added milk, sour cream, salt/pepper to taste.  I added a jar of sliced mushrooms to green beans.  Next time, my husband would like more meat and veggies.  He requested corn and peas, maybe some cooked carrot chopped small.  He likes it without cheese but I like it with cheese.  We both agreed that it’s good either way.  It’s a definite keeper – thank you!
