Description

A chicken, potato, and broccoli stew made in the crockpot.

Ingredients

  • 3 whole Frozen Boneless Skinless Chicken Breasts
  • 3 cans Cream Of Potato Soup
  • 1 can Water
  • 1 pound Frozen Broccoli Pieces
  • 8 ounces, weight Shredded Cheese

Preparation

*Note-this recipe is very versatile and forgiving. Don’t like broccoli? Try corn, or even no veggies at all. I have also tried this recipe with different cheeses. Mozzarella, cheddar, and colby-jack have all worked beautifully. I suspect other cream soups would work as well. Experiment!*

1. Plop chicken breasts in slow cooker.

2. Pour in the cans of cream of potato.

3. Fill one of the cans with water and dump that in too.

4. Pour broccoli over the top of all of it.

5. Cook on low all day, or on high all afternoon, until the chicken is thoroughly cooked. (If you want to get particular, I’d guess 8 hours on low, 3 or 4 hours on high)

6. Using a hard spoon or blunt knife (so you don’t scratch up your crockpot) break the chicken up into chunks.

7. Add in enough cheese to make it creamy and stir well.

8. Serve!

great and simple. i did add some seasonings as it tasted a little bland/too potato soupy. i added minced garlic and minced onion, dill and a little celery salt. my 11 year old picky eater loved it and had seconds! that’s a good review! thanks for posting the recipe!

This was really good! Next time I’m going to try using Cream of Chicken soup and maybe add some rice.
