This is a recipe that was served at a Pampered Chef party—simple and great-tasting.
Preheat oven to 425 F. Pat or roll the dough into a greased 10 X 15 pan. Top the dough with chicken and cheese. Bake for 20-30 minutes.
Meanwhile, prepare vegetables for topping. Dice tomatoes and discard the watery pulp inside. Quarter the avocado lengthwise, remove the pit, and strip the peel off. Dice avocado. Slice the purple onion very thinly. Toss veggies together with the juice from the lemon. Let the mixture marinate while pizza is baking.
When it’s done, remove pizza from the oven and allow it to cool for 5-10 minutes. Spoon the veggies on top of the pizza, discarding the extra lemon juice. Cut the pizza into squares and serve warm or cold.
If you don’t have the crescent dough, make your own crust: Stir together the dry ingredients. Add the milk and oil, stir with a fork, and pat or roll out the dough into a greased 10 X 15 pan.
