This easy chicken recipe mimics Chicken Wellington, but is much, much easier and a quick fix for a busy day. A super easy recipe that will result in a comforting warm meal. This recipe uses spinach and garlic, but substitute in any soft/wilty veggies and even cheese!
1. Season the chicken breasts with Lawry’s salt and fresh ground pepper. Brown chicken on a skillet with olive oil.
2. Preheat the oven to 375 degrees Fahrenheit.
3. Roll out the crescent roll dough on a greased cookie sheet. Separate the dough in half and press the seams together. (One cylinder will be enough for two chicken breasts. Press the seams of four crescent triangles together for each chicken breast.)
4. Spread a little bit of butter on the raw dough, and sprinkle on some minced garlic. Then put 1/2 cup of fresh baby spinach in the middle of each.
5. When chicken is almost fully cooked, place the cooked chicken in the middle of the dough on top of the spinach.
6. Fold up the dough so that the chicken and spinach are completely covered.
7. Put in the oven for 18-22 minutes (optional: brush on butter during the last 5 minutes of cooking).
8. Eat immediately.
