Curry shrimp rolls made with succulent cooked shrimp, crunchy vegetables and warming Indian spices in a creamy dressing—it’s a delicious new take on a summer staple!
In a medium bowl combine the cooked shrimp, onion, celery and cilantro. Set aside.
In a small bowl whisk together the mayonnaise, ranch dressing, curry powder and lemon juice and zest. Season with salt and pepper to taste. Pour dressing over shrimp mixture and toss thoroughly to combine.
Divide the shrimp salad mixture among the buns, sprinkle each with more cilantro and serve.
