Description

A Cozy Kitchen makes Curry Egg Salad Sandwich.

Ingredients

  • ⅓ cups Mayonnaise
  • 1 Tablespoon Lime Juice (half Of One Lime)
  • 1-½ teaspoon Curry Powder
  • 1 teaspoon Whole Grain Or Dijon Mustard
  • ¼ teaspoons Salt
  • 1 pinch Cayenne Pepper
  • 6 whole Hard Boiled Eggs, Chopped
  • 1 cup Diced Granny Smith Apple (roughly 1 Apple)
  • ¼ cups Finely Chopped Red Onion

Preparation

Mix together the mayo, lime juice, curry powder, mustard, salt and cayenne. In a separate bowl, add together the chopped eggs, apple and onion. Pour the curry dressing over the top and gently stir everything together. Serve on toasted wheat bread with lettuce, or just eat it with a fork as it is.

Didn’t have red onion so I used yellow. The apple was kind of weird but granny smith is definitely the way to go. Also thought I had curry powder but didn’t so I mixed up a substitute. Ate some on a whole wheat wrap with lettuce and the 2nd helping on a toasted white-wheat bun.

What a great recipie… it’s sitting right now on my counter waiting on the toast

A couple of comments if you don’t mind.

I found the curry dressing a little on the tangy side, so I added a tsp of brown sugar and it balanced the flavour to my liking.

I peeled the apple, but didn’t chop it small enough so I’m afraid I’ve got biggish lumps of apple this time.

Overall – I find this deeeeeelish It will be a welcome addition to my summer bbq table – so it’s definately not only something to add between two slices of bread, but a tasty salad.

I was looking for something cool and easy for a hot summer day & this recipe caught my eye…never thought curry and apple would be in an egg salad recipe…but this was yummy and refreshing! My 8 and 2 year old girls also approved. I didn’t have red onion, so I used a sweet onion I had on hand. And my husband had made off with my regular salt (long story) and hadn’t returned it, so I used ground sea salt in half the amount the recipe called for. I thought it was yummy, so I guess my changes didn’t affect it too much. :) I ate mine on toasted wheat with baby spinach leaves. I would totally make this again!

I made a version of this last night for my son and I. I didn’t have an apple or lettuce which would have been excellent on it. Son, age 29, really liked it too.
I also forgot the Cayenne…ooops… Just noticed that.
Next time will try with a little brown sugar. Just to see if it adds something.
We both enjoyed it just as was made on grilled pumpernickel bread.

This was GOOD! I was a little nervous about the addition of the apple, because I can be kind of picky about the addition of fruit to savory foods, but the apple flavor was not overpowering. It really just added a bit more crunch, which I really liked. I will add more onion next time for a bit more bite.
