Description

A delicious and simple version of curry chicken that is great served with rice.

Ingredients

  • 2 whole Onions, Finely Chopped
  • 2 cloves Minced Garlic
  • 2 Tablespoons Oil Or Shortening
  • 2 Tablespoons Lemon Juice Or Vinegar
  • 4 teaspoons Curry Powder
  • 3 cans (5 Oz. Can) Diced Cooked Chicken
  • ¼ cups Tomato Sauce Or Tomato Juice
  • 1 teaspoon Salt
  • 2 cups Chicken Broth
  • 1 can (13.5 Oz. Can) Coconut Milk

Preparation

Saute onions and garlic in a heavy deep skillet in oil or shortening.

Blend the lemon juice or vinegar with the curry in a small bowl.

Stir curry mixture into the sauteed onions for 1-2 minutes.

Add chicken and stir to coat the meat with the spices.

Add the tomato sauce/juice, salt and broth and bring to a boil.

Reduce heat, cover and simmer for 20 minutes.

Add coconut milk and simmer for 3 minutes.

You may want to add more curry at the end depending on the type of curry you are using and personal taste.

This is the first time I’ve ever made any type of curry recipe, and it was different than I expected. I was thinking it would turn out with a thicker sauce, almost like a stiry fry, but it was more like a soup. I still served it over rice. I’m actually eating the leftovers right now for lunch and it’s much better after sitting overnight. Last night, it was very spicy, but now it seems to have mellowed out a little. I think I would be willing to try this recipe again, but I might make some changes.

I make this dish all the time. It is now a staple on our weekly menu. I think it tastes similar to a Chicken Korma. The additions I make are a little bit of sweet (sugar or substitute) at the end to enhance the coconut flavor and I put potatoes in it to make it a chicken/vegetable Korma type dish. The family loves it!
