Description

This is what my mother calls a “winter” food, but I make it all year long. It is delicious served over a steamy bowl of white rice and sweet cornbread.

Ingredients

  • 1 pound Dried Red Beans
  • 7 cups Water
  • 1 whole Green Bell Pepper, Chopped
  • 1 whole Onion, Chopped
  • 3 stalks Celery, Chopped
  • 3 cloves Garlic, Finely Chopped
  • ½ pounds Andouille Sausage Or Polish Sausage, Sliced
  • 3 Tablespoons Creole Seasoning
  • Hot Cooked Rice

Preparation

Place all ingredients except rice in a 4-quart slow cooker.

I use my handy crock pot because I have no clue what the difference is between a slow cooker and a crock pot.

Cook, covered, at HIGH for 7 hours or until beans are tender. Serve with hot cooked rice and some homemade cornbread. Delicious, warm, and your man will love you forever.

In case you’re still wondering, a Crock Pot is just a brand name for a slow cooker. So the difference is…there is no difference! Looking forward to trying out this recipe – thank you for sharing!

Love this! Made it the other day and my family adored it. I have a toddler so I skipped the creole seasoning and instead used garlic salt and paprika and it was still delicious and flavorful. Hubby and I just added more seasoning to our individual portions.

Made this last night – yum! I chopped everything the night before and put it all together in the morning. It cooked on Low all day and was so good for dinner. Leftovers are great too!

My husband loves this dish. He is from LA and usually hates every crockpot recipe but not this one. Its a little spicy for my kids. Leftovers freeze well too….

This was so easy to make and came out really well. I cooked it on LOW for 11 hours and it was wonderful.

Great meal! Easy peasey too :) I was concerned how hubby might feel about the majority of his dinner being ‘beans’, but he loved it too. Now if only I’d of had some sweet cornbread to compliment it too :)

This had to be the most delicious and EASIEST recipe for red beans and rice I’ve found so far. I just threw everything into the crockpot and set an alarm for 7 hours later, and dinner was done except for making the rice.

Mine turned out fairly spicy, which I like, and the level of spice in your dish will probably depend on what type of creole seasoning you use (I used Tony Chachere’s).
