Description

You have to become creative when you have a garden with cucumbers because they are so productive. This is a good summer recipe to help you use all those delicious cold cucumbers. Serve them at a baby shower or wedding reception. They are lovely.

Ingredients

  • 1 package Cream Cheese, Softened (8 Ounce Package)
  • ¾ ounces, weight Dry Italian Style Salad Dressing Mix
  • 2 teaspoons Dried Dill Weed
  • ½ cups Mayonnaise
  • 1 loaf Baguette, Cut Into 1/2 Inch Thick Slices
  • 1 whole Cucumber, Sliced

Preparation

In your favorite bowl, mix together the cream cheese, dressing mix, dill weed, and mayonnaise.

Spread a thin layer of the mixture on each slice of bread and top with a slice of the cucumber.

I also like to cut the cucumber into thin strips instead of slices when it’s for something special like a baby shower or wedding shower.

Sprinkle with some of the dill weed if you want to make it stand out even more.

I made this for a recent baby shower and everyone really enjoyed it. My only substitute using mini bagels instead of baguettes as the baguettes I had purchased were really hard and crumbly. The flavor with the dill and cucumber is somewhat reminiscent of tzatziki. To make the cucumbers look more decorative and ribbon-like, a potato peeler worked great!
