Description

Chicken cacciatore with a twist: it’s made in a crockpot!

Ingredients

  • 10 whole Chicken Thighs, Bone-in, Skin Partially Removed
  • ¼ teaspoons Onion Powder
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Salt
  • 28 ounces, weight Can Crushed Tomatoes
  • 6 ounces, weight Can Tomato Paste
  • ½ cups Warm Water
  • 1 bunch White Asparagus, Tips Removed, Chopped Diagonally
  • ¼ teaspoons Crushed Red Pepper Flakes

Preparation

1. Season chicken with onion powder, garlic powder, black pepper, and salt.
2. Put the chicken into your crockpot (I have a 6-quart and had to stack them a bit).
3. Pour the crushed tomatoes, tomato paste, and warm water over the chicken.
4. Put the lid on, set the crockpot to high and cook for 4 1/2 hours.
5. When the timer beeps, remove the lid and stir in your white asparagus, followed by the red pepper flakes.
6. Keep the lid off! Set the timer for 1 more hour and continue cooking.
7. Once the timer beeps again, you’re all set!
