Description

An easy crock pot split pea soup. Throw this together before work and come home to a hearty dinner.

Ingredients

  • 1 pound Split Peas (dried)
  • 2 cups Diced Ham
  • 1 cup Diced Carrots
  • 2 cloves Garlic, Crushed Or Minced
  • 1 whole Medium Onion, Chopped
  • 2 leaves Bay Leaves
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 cups Low Sodium Vegetable Stock
  • 3 cups Boiling Water

Preparation

Remove any bad peas or small pebbles from the split peas and then add them to the crock pot. Add the rest of the ingredients to the crock pot in the order listed. Cook 4 to 5 hours on high heat or 6 to 8 hours on low heat.

If you like the consistency of the soup, leave it like it is. Otherwise, add either 1 cup hot milk or 1 cup hot water after cooking to thin it out a little.

Serve with some warm French bread with butter. This is a fall favorite at our home. My 9-year-old begs me for this!

It isn’t soup weather in Texas just yet but the mornings are beginning to cool. I’m saving this one to try when we have a cold snap!
