Description

Deliciously creamy, quick and easy, healthy, and oh so yummy!

Ingredients

  • 6 ounces, weight Pasta
  • 2 cloves Garlic
  • 1 whole Lime, Zest And Juice
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Large Avocado, Pitted
  • ¼ cups Fresh Basil
  • ½ teaspoons Kosher Salt
  • 1 dash Fresh Ground Black Pepper

Preparation

Cook your pasta according to the package directions.

To make the sauce, place the garlic cloves, lime juice, and olive oil into a food processor. Process until smooth. Add in the avocado, basil, and salt. Process until smooth and creamy.

Pour sauce over pasta and toss until fully combined. Garnish with lime zest and black pepper. Enjoy!

Note: Because of the avocado, this does not reheat well.

What a unique recipe! I love the idea of using just a simple avocado as a “cream” sauce. This is going on my “must try” list!

Very interesting! I think there was too much lime for my taste. I think it would make a better side dish than main dish as the flavors are really bold and a bit over-powering without a break to something else.
