Description

This is BY FAR my favorite pork tenderloin recipe to date. It is simple enough for a weeknight meal, but special enough for company. Don’t let the combination of ingredients or their simpleness freak you out—I think the flavor fairies do a little dance on this while in the crock pot, because it turns into something SPECTACULAR!

Ingredients

  • 2 pounds Pork Tenderloin, 2 Tenderloins At 1 Pound Each
  • 1 can Whole Cranberry Sauce, 14-16 Oz Depending On What Your Grocery Store Carries
  • ⅓ cups Dijon Mustard
  • ½ cups Brown Sugar
  • ½ Tablespoons Salt
  • 1 teaspoon Fresh Ground Pepper
  • 1 whole Lemon, Juiced

Preparation

Trim your pork tenderloin of any of the silver “stuff” that may be left on the meat. Rinse under water and place in a crock pot. In a medium bowl, combine cranberry sauce, mustard, brown sugar, lemon juice, salt, and pepper. Pour sauce over the pork. Put the lid on the crock pot and cook on high for 1 hour, then lower the heat to low setting and let cook for an additional 4 hours.

Just tried this last night… delicious! I did one chunk of meat but with the same amount of sauce so there was extra to put over rice. We will make this again!

This sounds lovely!

By cranberry sauce, do you mean the jelly or the stuff with actual solid cranberries?

I made this for dinner tonight, and it was WONDERFUL! I put in in my crock pot for 8 hours on low, and when it was done, it was so juicy and tender, it melted in my mouth! I will definitely make this on a regular basis.

I am so sorry, I wasn’t notified there was a question on this! There is no set amount of lemon juice, just get as much juice as you can out of one lemon. It just helps brighten the flavor. Hope you enjoy it!

I made this last weekend for dinner with home made cranberry sauce. It was wonderful! As a rule, I usually don’t like fruit cooked with meat, but just happened to have all the ingredients…..my husband and I loved the flavor!!!! Great recipe.

This was very tasty but I could have used a little more seasoning. Not sure what was missing but it was very juicy.

Made this last night. WOW was it yummy! Was a little concerned with the cranberry/mustard combo, but it turned out fantastic. So, don’t fear the ingredients and go for it, you’ll be glad to did!
