Description

I love this recipe because it lets the crab flavor really shine. These are light and easy to make.

Ingredients

  • 1 pound Jumbo Lump Crab
  • 1 whole Small Red Bell Pepper Finely Diced
  • ¼ cups Minced Green Onions
  • 2 Tablespoons (heaping) Mayonnaise
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Fresh Ginger, Minced
  • 1 teaspoon Chopped Chives
  • Sea Salt And Fresh Ground Black Pepper To Taste
  • 2 cups Panko Bread Crumbs Divided
  • Olive Oil And Butter For Frying

Preparation

Gently mix all the ingredients except for the panko. Fold in one cup of the panko.

Form into cakes and coat with remaining 1 cup of panko crumbs. Saute in a combo of olive oil and butter over medium heat until golden brown.

These are great served with a wasabi mayo or a dill/lemon mayo and a side of your favorite coleslaw. An Asian slaw would also be a great choice.
