Description

I know it’s a strange name, isn’t it? I promise that there is no raccoon in it. It is the best hamburger cheese dip I’ve ever tried. It was the first recipe I posted on my blog and is, by far, the most requested item for me to bring to potlucks.

Ingredients

  • 1 can (10.75 Oz. Can) Tomato Soup
  • 1 can (10.75 Oz. Can) Mushroom Soup
  • 1 jar Salsa (16 Oz)
  • 2 pounds Velveeta Cheese Cut Into Cubes
  • ⅛ teaspoons Cayenne Pepper
  • 1 Tablespoon Oil
  • 1 whole Large Onion, Diced
  • 4 cloves Garlic, Minced
  • 2 pounds Ground Beef
  • 1-½ teaspoon Kosher Salt (or 3/4 Tsp Table Salt)
  • ¾ teaspoons Black Pepper
  • 2 bags Tortillas Chips

Preparation

Add the soups, salsa, cheese, and cayenne to a cold crock pot (5 quart or larger). Stir to combine, set on high heat, and cover.

Heat the oil in a large skillet on medium heat. Add the onions and sauté for a couple of minutes until they just begin to soften. Add the garlic and sauté for another minute. Add the hamburger, salt, and pepper and cook until the meat has fully browned. Drain.

Using a potato masher, mash the hamburger into a fine crumb. Add the meat mixture to the crock pot and stir.

Heat the dip until the cheese has melted and the mixture is hot – about 2 hours. During cooking, stir the dip every 45 minutes to ensure even heating.

The dip tastes even better when reheated. In fact, I rarely serve the dip on the same day I make it. I normally follow the above instructions and heat it for 2 hours, then transfer the dip to a large bowl and refrigerate it overnight. The next day, I reheat the dip in a crock pot (on high heat) about 2 to 2 1/2 hours before serving – stirring every 45 minutes. Serve with your favorite brand of tortilla chips.

made this for a special snack for my husband while he watched the Dallas Cowboys play. Ok, I changed the ground beef to ground pork sausage for an extra zip….great football game snack…husband loved it! thanks for the recipe!

Abigaele,
We are not fans of mushrooms either. I have been substituting Campbell’s Cream of Onion soup for years …well, too many to mention here. The texture and consistency seem to be the same as Cream of Mushroom. If you can’t find Cream of Onion, Cream of Celery is another option.
This dip does sound yummy, doesn’t it?

Abigaele — Not a mushroom fan, eh? You could add a second can of tomato soup or perhaps even Cream of Chicken. The mushrooms are not prevalent. In fact, most people are shocked to hear that there is mushroom soup in the recipe — including those who hate mushrooms.

I made this for a pot luck, the only change I made was I subbed 1 lb of ground beef for ground spicy sausage. It was a HUGE hit and now it is a request for every get together. Thank you! So yummy, really easy to make and great for a crowd.
