The flavors of dill and orange are an outstanding complement to this salmon burger, and the use of almond meal as a gluten-free binder is positively genius. The almond flavor takes a backseat to salmon’s longtime friend, dill, but quietly works with the egg to create a burger that holds together surprisingly well; it’s delicate, but doesn’t fall apart.
1. Place all the ingredients in a large bowl and mix thoroughly using your hands (make sure not to overwork the salmon; it will turn tough when you cook it).
2. Using your hands, form 4 individual round salmon patties.
3. Heat a medium-sized frying pan or a nonstick skillet with extra virgin olive oil over medium heat (you can also bake the patties in the oven at 350ºF for 10-15 minutes).
4. Cook the patties, turning once to brown on each side, about 6-7 minutes each.

What is almond meal flour? Can you use regular flour?
