Description

This chicken is marinated overnight then grilled, and brushed with sweet chili sauce. It’s a delicious and easy dinner!

Ingredients

  • ¼ cups Extra Virgin Olive Oil Plus Extra For Your Grill Grate/pan
  • 3 Tablespoons Garlic, Minced
  • 1 teaspoon Salt
  • ½ bunches Fresh Cilantro (a Big Handful), Finely Chopped
  • 1-½ pound Boneless, Skinless Chicken Thighs, Fat Trimmed
  • ¾ cups Sweet Chili Sauce

Preparation

Whisk together the olive oil, garlic, salt, and cilantro in a small bowl. Pour the mixture into a large, plastic Ziplock bag. Add the chicken thighs to the bag, and zip the bag shut, making sure that all of the air is removed from the bag. Move it around to make sure all of the chicken is coated with the cilantro mixture. Put it into the refrigerator and marinate overnight or for at least 6-8 hours.

Preheat a grill or grill pan (I used a grill pan) to medium meat, and coat with olive oil or oil spray. Take the chicken out of the bag and place onto the grill. Grill on the first side for about 5 minutes. Flip the chicken and grill for another 4-5 minutes, or until the chicken is cooked through.

Remove the chicken from the grill, and place onto a serving platter. Brush the chicken with a generous amount of sweet chili sauce, and serve!
