Description

A very quick but flavorsome pizza that is perfect for Friday night dinner.

Ingredients

  • 1 whole Pizza Base/Crust (store Bought Is OK)
  • 1 bag Tomato Paste
  • 1 dash Olive Oil
  • 2 whole Chorizo Sausages
  • 2 whole Onions, Sliced
  • 1 pinch Dried Chili Flakes (optional)
  • 1 bunch Parsley, Chopped
  • 1 whole Lemon

Preparation

Preheat oven to 180 – 200 degree C

Place pizza base on pizza stone or baking sheet.
Spread tomato paste evenly over pizza base.
Sprinkle dried chili flakes over tomato paste.

Heat olive oil in fry pan.

Cut Chorizo into slices and cook in fry pan until slightly charred and crispy.

Cut onions into slices and cook in fry pan with Chorizo until lightly golden.

Cut button mushrooms into slices and add to frypan and stir to coat with oil. Cook for 5 minutes until mushrooms are just cooked.

Take Chorizo mixture off heat and stir through chopped parsley.

Spread Chorizo mixture evenly over pizza base and place in hot oven.

Cook for 10 minutes or until base is crispy.

Squeeze lemon over hot pizza.

Cut into 8 slices and serve.

Hi spicynsalty,

I have updated the recipe to include the Chorizo and Mushroom amounts – it won’t save in Metric though (which is what I work in here in Australia!) so the measurements convert to US and come out looking a bit weird.

The amounts can vary a lot depending on how thick you like the topping to be – I always add more mushrooms than I think I’ll need as they tend to shrink down after cooking.
