Description

A spicy kick to an old favorite!

Ingredients

  • 1 pound Lean Ground Beef
  • 2 Tablespoons Red Chili Pepper Spice Blend, Or 2 Red Chili Pepper Minced, Divided
  • ¼ cups Shredded Parmesan Cheese
  • 1 whole Egg
  • ½ cups Bread Crumbs
  • ⅓ cups Diced Tomatoes, Drained (canned Is Fine)
  • 3 cloves Garlic, Crushed
  • 1 teaspoon Salt
  • 1-½ cup Pureed Tomato
  • ½ cans (10.75 Oz. Size) Cream Of Mushroom Soup
  • 1 Tablespoon Worcestershire Sauce

Preparation

Preheat oven to 425ºF.

Combine ground beef, 1 tablespoon red chili pepper spice blend, parmesan, egg, bread crumbs, diced tomatoes, garlic, and salt in a bowl. Mix together and form into a loaf. Place in a 9″square pan. Put in the oven, uncovered, for 15 minutes to brown.

While meatloaf is browning, make the sauce. Combine pureed tomato, remaining 1 tablespoon red chili pepper spice blend, cream of mushroom and Worcestershire sauce in a bowl. Whisk until no longer clumpy.

Remove meatloaf from oven and pour sauce over the top. Return to the oven (still uncovered); reduce oven temperature to 375ºF. Bake for 45-55 minutes, until cooked through.

Delicious. The only change I made was Edam instead of Parmesan because it was all I had. Very flavorful on it’s own too, without the sauce.
