Description

Chili chicken cooked in oyster sauce with French beans and green peppers.

Ingredients

  • 1 Tablespoon Oil
  • 5 cloves Garlic, Crushed And Chopped
  • ⅔ pounds Chicken Breast Cut In Strips
  • 1 teaspoon Fish Sauce
  • ½ teaspoons Spicy Chili Paste
  • 20  Green Beans Or French Beans, Cut Thinly
  • 4  Long Green Chilies, Cut Thinly
  • 1 bulb Red Onions, Cut Thinly
  • ½ cups Oyster Sauce
  • ⅓ cups Water
  • ½ teaspoons Sugar
  • Cooked Rice, To Serve

Preparation

Heat oil in a pan over medium heat. Saute garlic and chicken in hot oil. Season the dish with fish sauce and chili paste as it cooks. Be cautious in putting spicy chili paste, there are brands that are really feisty. 1/2 teaspoon is the amount of spice I can handle. Adjust to taste later on when the dish is nearly cooked.

Add the beans, chilies and onions when the chicken is cooked. Cover and cook for 5 minutes.

Add oyster sauce and water when the beans turn vibrant green. Simmer over low heat for 10 minutes, then add sugar to control the spice. If you want it spicier however, you can add more chili paste now.

Let it simmer for another 5 minutes. Turn off the heat. Let it cool uncovered.

Serve with hot steamed rice.
