A super easy casserole that’s great for low carbers and the rest of the family as well.
Grease an 8×8″ baking dish. Arrange half of the shredded pepper jack cheese in the bottom of the baking dish. Spread the diced chiles (well-drained) on top of the cheese layer and top with the remaining pepper-jack cheese. Beat the eggs, cream, salt and black pepper well. Pour evenly over the chiles and cheese. Top with the shredded cheddar cheese.
Bake at 350ºF for 40 minutes or until golden brown. Let stand 10 minutes before cutting.
