Description

Use up some of your zucchini with this delicious saute over pasta. To make it gluten free, just use gluten free pasta. My favorite is Trader Joe’s Brown Rice Penne.

Ingredients

  • 1 Tablespoon Oil
  • 1 whole Onion, Chopped
  • ½ cups Baby Carrots
  • 2 cloves Garlic, Minced
  • 2 whole Small Zucchini, Sliced
  • 1 Tablespoon Oregano
  • 1 can Chickpeas, Drained And Rinsed
  • 1 can Diced Tomatoes
  • 1 pound Pasta, Cooked
  • ¼ cups Parmesan Cheese

Preparation

Heat oil in skillet. Add onions and carrots. Saute till they are starting to soften.

Add garlic and zucchini and saute until the zucchini start to soften.

Add oregano and stir to combine. Add chickpeas and diced tomatoes. Cook till heated through.

Serve over pasta with Parmesan cheese.
