A flavorful meal.
In a large pan over medium heat, saute the onion and garlic in the margarine and olive oil for 2 minutes. Add the chicken, lemon juice, salt, pepper, and parsley. Add the shrimp, if using. Simmer for 10 minutes, stirring occasionally, until the chicken is fully cooked.
Remove from heat; add tomato and green onions. Serve over hot cooked rice or pasta.
