Description

A savory take on an old classic comfort food. Super easy! Melt in your mouth cream cheese biscuits top this pie. Leftovers can be frozen into individual servings. They warm up wonderfully! In fact, the photo you see has been frozen and reheated!

Ingredients

  • 1 Tablespoon Butter
  • ¼ whole White Onion, Chopped
  • 1 pound Frozen Mixed Veggies, Thawed
  • 2 cups Cooked, Shredded Chicken Breast
  • 21-½ ounces, fluid Cream Of Chicken Heathly Request (2 Cans)
  • ¼ cups White Wine
  • 1-½ stick Butter, Softened
  • 8 ounces, weight Low Fat Or Regular Cream Cheese, Softened (Fat Free Messes With The Texture)
  • 2 cups Flour, Self Rising

Preparation

Preheat oven to 375F.

In a large saucepan, melt 1 Tablespoons of butter. Saute onion and thawed mixed veggies. Once onion is softened, add chicken and cream of chicken soup. Mix, then slowly add white wine. You may not have to use the entire 1/4 cup, that’s just my preference!

Once everything is thoroughly heated and mixed together, spread this creamy succulent mixture into a casserole dish (I use an 8×11, but 9×13 is fine).

Next… on to the biscuit topping…

In a large bowl, cream 1 and 1/2 sticks of butter and the cream cheese together. Add flour and mix until it comes together as a dough. This is your biscuit dough. Yummy…

Now, you can either drop these biscuits onto the creamy succulent mixture, or you can roll and cut them out with a round cookie cutter. I choose to do the latter, I think it just looks prettier. Place these beautiful biscuits on top of the chicken mixture and bake for 20-30 minutes until golden. Mmm, talk about creamy comfort food!!

You can also put the dish into the fridge unbaked overnight and bake the next day.

I made this for my husband tonight – it was amazing! The best part was definitely the crust. I could tell it was cream cheese but it wasn’t overt, it was subtle and man, it was tasty! Definitely five mitts! :)

This was nice and quick, I added cooked diced potato to it and used herb & garlic cream cheese. We still preferred our go to “Starving Guy Chicken Pot Pie” from Loonyspoons cookbook though. Thanks for sharing :)

So good! I used a variety of garden veggies instead of the frozen mix (corn, potatoes, carrots & peas) and milk instead of wine, and it was a huge hit – everyone from the 5-yr-old to the 19-yr-old loved it! The cream cheese biscuits were delicious. This is definitely going in the rotation!
