A tasty (and relatively healthy) chicken pot pie recipe I adapted from my friend Jessica.
1. Melt butter. Add flour, salt and pepper, and onion/leek.
2. Cook, stirring occasionally, over medium heat until bubbly; remove from heat. (Note: it may not bubble.)
2. Stir in broth and milk. Heat to boiling, stirring constantly.
3. Boil/stir for 1 minute. Add chicken, peas, and carrots. Remove from heat.
3. Preheat oven to 425F.
4. Put one thawed pastry crust in a 9″ pie or quiche pan. Pour chicken mixture into crust. Lay remaining pie crust (or pieces) on top.
5. Bake about 35 minutes until golden.
