Description

My grandparents used to make this, served over mashed potatoes for a quicky dinner. I used to beg them to make it every time I was over there. Crunchy, buttery topping, creamy noodle goodness … so easy and delicious!

Ingredients

  • 5 slices White Bread
  • 1 whole Sleeve (4 Oz.) Ritz Type Butter Crackers
  • 2 cans (10.75 Oz. Can) Chicken Noodle Soup
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • Salt And Pepper, to taste
  • 1 cup Pre-cooked Chicken, Chunked Up (optional)
  • 4 Tablespoons Butter, Divided Into Pats

Preparation

Spray a loaf pan with cooking spray and set aside.

Trim the edges off the bread slices. Cut bread into small cubes and place in a mixing bowl. Crush the sleeve of butter crackers and add ¾ of the crushed crackers to the bowl.

Add the soups to the bread and cracker mixture and stir easy to combine. Salt and pepper to taste. Add cooked chicken, if using.

Pour into prepared loaf pan and sprinkle with remaining crushed crackers. Add butter pats on top. Cover with plastic wrap. Chill overnight or at least 6 hours.

Cook at 350 degrees for about 45 minutes or until bubbly. If using as a main dish, serve over mashed potatoes if desired.

made this over the weekend, YUM!!!!! Made a couple of adjustments like sliced mushrooms because i love ‘em. And added some grated parmesan cheese for a little depth of flavor. Great recipe if you’re into casseroles!!!

I only had Cream of Celery soup on hand so used that, otherwise I made this recipe the way it was written. I’m a cassarole lover, and this one was very good. Delicious the next day as leftovers too. Very easy to make. I assembled it before work and just popped it in the oven when I got home. Will definitely make this again.

This is so easy to make and it really is very tasty. I should also point out that it is a VERY kid-friendly meal. My son gobbled it up. I think it is something you could totally play around with. I always make a recipe the way it is written the first time around, then I play with it the next time I make it. I think next time I may try making it with cream of celery soup instead of the chicken or I may just add a little garlic powder to the party. But honestly, it is delicious just the way it is written in this recipe!! A keeper for sure!
