My husband made this one night for dinner. He loves mushrooms and there are a lot of them in this recipe. The chicken was very moist and tender.
Preheat oven to 350 F.
Place half of the mushrooms in 9×13 inch pan.
Dip chicken into the beaten eggs, then roll in bread crumbs.
In skillet, melt butter over medium heat. Brown both sides of chicken in skillet. Then place chicken on top of the layer of mushrooms. Next, arrange remaining mushrooms on top of the chicken, and top with mozzarella cheese. Add chicken broth to pan.
Bake for 30-35 minutes, or until chicken is no longer pink and juices run clear.
