Description

These Chicken Lettuce Wraps are 100% addictive. I couldn’t get enough of the creamy peanut butter dipping sauce and the mildly spicy chicken. This a healthy, gluten-free recipe that your family will love.

Ingredients

  • 2 pounds Ground Chicken
  • 2 Tablespoons Sesame Oil
  • 3 cloves Chopped Garlic
  • 1 package (16 Oz. Size) Baby Carrots, Chopped In Food Processor
  • 1 Tablespoon Sriracha
  • 2 Tablespoons Tamari Or Soy Sauce
  • 2 Tablespoons Hoisin Sauce
  • 2 whole Limes, Juiced
  • 1 head Romaine Lettuce, Leaves Separated
  • FOR THE PEANUT SAUCE:
  • 2 Tablespoons Peanut Butter
  • 2 Tablespoons Tamari
  • 2 Tablespoons Rice Vinegar
  • 1 teaspoon Hoisin Sauce

Preparation

Brown ground chicken in sesame oil until cooked through. Add garlic and carrots, cook for a few minutes.

In a bowl, add remaining ingredients (except lettuce) and whisk well. Add to chicken and stir well. Cook for another minute or two. Remove from heat.

Make the sauce by whisking all ingredients in a bowl. Play around with it a bit. If it’s too thick add more water; too thin, add more peanut butter.

To serve, scoop 1/2 cup chicken mixture onto each leaf of romaine lettuce. Drizzle with peanut sauce and enjoy.
