Description

Chicken breasts cooked in the skillet, with cream, Dijon mustard, tarragon, and sour cream.

Ingredients

  • ¼ cups Butter
  • 6 pieces Chicken Breast, Boneless, Skinless
  • 1 whole Large Onion, Thinly Sliced
  • 1 cup Heavy Cream
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Tarragon, Fresh
  • ½ teaspoons Salt
  • ½ teaspoons Freshly Ground Black Pepper
  • ½ cups Sour Cream

Preparation

Use salt/pepper/dried tarragon and whatever seasoning you like..I like to use french seasonings mix – tarragon, sage, rosemary etc.

In a large skillet over medium-low heat, melt butter.

Brown chicken in hot butter, turning to brown both sides, about 8 to 10 minutes total.

Remove from skillet.

Add onion; sauté for about 5 minute, or until onion is tender.

Stir in heavy cream, mustard, tarragon, salt, and pepper.

Add chicken back to skillet; heat to a simmer.

Cover and simmer over low heat until chicken is tender, about 20 minutes.

Remove chicken from skillet.

Whisk sour cream into the sauce in skillet until smooth.

Serve the chicken Dijon with sauce spooned over chicken breasts.

I often serve with grilled asparagus and wild rice.

*you can also reduce the amount of tarragon to 1 tablespoon or use dried. I just prefer fresh :) Hope you like it! It’s always a big hit for entertaining.

I made this last night and somehow totally forgot the sour cream step! I didn’t even notice, it was still so good! Might be an option if you want to cut back on some calories
