Description

A delish dish that has titillated many mouths in my home. Marinated artichoke hearts, carrots, mushrooms, greens onions in a soup mix over white or brown rice…

Ingredients

  • 2 Tablespoons Butter
  • 3 cups Sliced Mushrooms
  • 1 cup Thinly Sliced Carrots
  • 1 cup Chopped Green Onion
  • 2 cans (10 Oz) Cream Of Chicken Soup
  • ½ cups Heavy Cream
  • ½ cups Chicken Broth
  • 1 teaspoon Salt
  • 3 cups Cooked, Then Cubed Chicken
  • 3 jars Marinated Artichoke Hearts, Chopped
  • 3 cups Shredded Mozzarella Cheese
  • 4 cups Cooked White Or Brown Rice
  • ½ cups Grated Parmesan Cheese

Preparation

1.) Preheat oven to 350 F.

Heat butter in a large skillet over medium heat; add mushrooms, green onions and carrots. Saute’ until carrots are tender, about 10 min.

2.) Remove skillet from heat. Add soup, cream, broth and salt; mix well.

3.) Combine chicken, mushrooms mixture, artichoke hearts and mozzarella in a large bowl; mix well.

Grease a medium casserole dish with cooking spray. Spread rice in bottom of casserole.

4.) Spread chicken mixture over rice. Sprinkle with Parmesan.

Bake until bubbly and golden brown, about 25 min.

Sooooooo good!! Tastes just like my fave Artichoke&Mushroom Chicken from Marie Callendar’s but in casserole form!! I dumped in uncooked Minute rice&uncooked chicken and cooked for a bit longer and it still tasted marvelous!! Using precooked would def make for a quick&easy weeknight dinner! Thanks for the great recipe!

This is awesome. My husband just raved about it. I did substitute Worthington’s FriChik for real chicken as we are vegetarian.
