Description

This one is definitely a crowd-pleaser and a regular around our house. It’s perfect comfort food! It’s great for preparing early and baking later. It’s fun to let the kids help on this one too.

Ingredients

  • ½ pounds Chicken Breasts
  • 1 cup Uncooked Rice
  • ½ cups Chopped Broccoli
  • 1 cup Shredded Cheddar Cheese
  • 1 can Cream Of Mushroom Soup
  • 1 cup Mayonnaise
  • Salt And Pepper, to taste
  • 1 cup Crushed Ritz Crackers
  • 2 Tablespoons Butter

Preparation

1) Preheat oven to 350 degrees. Boil chicken in water; cool and shred.

2) Cook rice and broccoli according to packages.

3) Mix mushroom soup with 1/2 can of water. Add mayo, salt and pepper and mix well.

4) Add 1/3 of the mayo mixture to the bottom of a 2-quart casserole dish.

5). Layer half the chicken, rice, broccoli and cheese in the casserole dish. Add more mayo mixture, then another layer of the remaining chicken, rice, broccoli and cheese. Add the remaining mayo mixture on top of the casserole and spread evenly.

6) Melt the butter on low in a sauce pan. Add the crumbled Ritz crackers and stir to coat evenly.

7) Spread the buttered crackers on top of the casserole.

8) Bake in the oven for 30 minutes at 350 degrees. Enjoy!

This was very tasty, and my family liked it. I will make this again, with a few minor changes. The casserole was very rich, so I might use lowfat mayo and reduced fat cream of mushroom soup, and add more broccoli to cut the richness.

My family loved this! Very easy to prepare – and it sneaked in broccoli. My only complaint? There wasn’t enough left for lunch the next day. :)
