This is a simple, delicious way to cook a whole chicken. No fuss, prep the night before, and put it in your crock pot when you wake up. By the time you come home from work, your house will smell great and your dinner will be ready!
Chop the onion and place it in the bottom of the crock pot. Add chicken (cleaned), onion soup mix, pour in chicken broth, add bay leaves, and set your crock pot to low. Cook for 8 hours.
Remove the chicken from the crock pot. It will fall apart.
Sift out any bones and freeze the leftover broth. Perfect for homemade soups.

I couldn’t find a three pound chicken at my market (only 5-7 lb) so I bought three pounds of bone-in, skin-on chicken breasts and threw them in the pot with black pepper, onion and broth/water (I didn’t have enough broth–it was kind of a last minute decision). Turned it on low and let it cook for 8 hours then cut it off and let it sit for a few hours to cool. The meat FELL OFF THE BONE beautifully. Excellent way to prep chicken to have on hand in the freezer for any number of casseroles, soups or chicken salad.
